Paneer Perplexity: Navigating the Maze of Authenticity in Dairy Products

Paneer, a beloved staple in Indian cuisine, has recently fallen victim to rampant adulteration, posing health risks to consumers. With cases of counterfeit paneer surfacing frequently, it has become imperative for consumers to discern between authentic and fake paneer.

In a recent crackdown, authorities confiscated 1300 kilograms of counterfeit paneer along the Mumbai-Delhi expressway, underscoring the magnitude of the issue. This follows a similar incident in May 2022, where Mumbai police seized 2000 kilograms of adulterated paneer from two factories.

The production of fake paneer typically involves the use of milk powder and water, curdled with lime juice and acetic acid, and enhanced with palm oil for a glossy texture. Such adulterated products not only compromise the nutritional value but also pose health hazards to consumers.

Recognizing the authenticity of paneer is crucial for consumers’ well-being. While regulatory bodies like the Food Safety and Standards Authority of India (FSSAI) enforce measures to curb adulteration, there are simple methods individuals can employ to assess paneer quality at home:

  1. Texture Test: Apply pressure to the paneer with your hands. Authentic paneer will hold its shape, while fake paneer is likely to crumble easily.
  2. Iodine Test: Boil a piece of paneer in water and allow it to cool. Add a few drops of iodine tincture to the paneer. If the color changes to blue, it indicates the presence of starch, suggesting the paneer is fake.
  3. Arhar Dal & Soybean Powder Test: Boil a sample of paneer and let it cool. Sprinkle some arhar dal powder or soybean powder on it. Adulterated paneer, containing substances like detergent or urea, will turn light red upon contact with these powders.
  4. Taste Examination: Authentic paneer has a soft, chewy texture, while counterfeit paneer may feel excessively firm or rubbery. Moreover, paneer contaminated with detergent often exhibits a sour taste. Hence, tasting a small portion before purchase can help identify potential adulteration.

By employing these simple techniques, consumers can safeguard themselves against the perils of counterfeit paneer and ensure the authenticity and quality of this cherished ingredient in their culinary endeavors. Remember, staying informed is the first step towards a healthier and safer dining experience.
