Nourishing Belly, Delighting Palate: The Magic of Black Kavuni Rice Kanji for a Healthy Start

Ingredients:

  • Black Rice: 200 grams
  • Algae Lentils: 4 spoons
  • Chives: 1/2 handful
  • Tomato: 1
  • Carrot: 1
  • Garlic: 3 cloves
  • Water: 6 cups
  • Green Chillies: 2
  • Coconut Milk: 300ML
  • Coconut Oil: As required
  • Fenugreek: 1/4 tsp
  • Cumin: 1/2 tsp
  • Coriander Leaves
  • Mint Leaf
  • Salt: As needed

Recipe:

Soak black rice for 8 hours. Keep the soaked black rice water separately, as it can be added while making porridge.

  1. Filter & Grind: Filter the soaked black rice without water and grind it into a fine paste along with washed algae lentils.

Cooking Process:

  1. Tempering: Heat a small amount of coconut oil in a cooker. Add fenugreek seeds, cumin seeds, and chopped garlic. Stir well.
  2. Vegetable Saute: Add chopped onions, carrots, and tomatoes to the mixture. Stir with coriander and mint leaves.
  3. Grinding Blend: Add the ground black rice to the sautéed vegetables.
  4. Water & Spice Infusion: Pour 6 cups of water, add salt, and stir. Add green chillies and let it boil thoroughly.
  5. Pressure Cooking: Cover the cooker and let it cook on medium flame until 4 to 5 whistles.
  6. Final Touch: After removing the whistle, stir the porridge thoroughly. Add thickened coconut milk, ensuring the stove is switched off.
  7. Garnish & Serve: Finally, add chopped coriander leaves. Your black rice porridge is ready to be served.
