From Field to Feast: The Art of Roasting Hurda and Reveling in Gluten-Free Bliss

As winter blankets the fields of rural Maharashtra, a culinary treasure emerges – Hurda, the tender and succulent form of Jowar (sorghum). This gluten-free delight, harvested in early January, takes center stage in the form of a traditional roasting process, creating a delectable winter delicacy that captivates both locals and curious food enthusiasts.

The Essence of Hurda: Roasting Process

The heart of the Hurda experience lies in its roasting process. Tender Jowar grains are skillfully roasted on dried cow dung, providing a slow and enduring heat source. The stems of the Hurda bunches, acting as natural grips, are thrust into the hot pit. In a mere five minutes, the result is a batch of beautifully roasted and flavorful Hurda. Skilled pit keepers, known as Hurda makers, masterfully handle the burning-hot delicacy with their bare palms, separating the roasted grains from the chaff through vigorous rubbing.

The Hurda Party Tradition

A celebration ensues in the form of a farm party, aptly named the “Hurda Party.” Freshly plucked and roasted tender Jowar becomes the star attraction, served piping hot and tender. Accompanying this winter delight are jaggery (gud), shengdana-lassun chutney (both red and green) (groundnut-garlic chutney), dry khobra chutney (dry coconut), wanga bhaji (Brinjal vegetable), and taak (buttermilk). The ensemble is completed with the fiery Theecha made of green chillies and garlic, creating a wholesome and flavorful feast.

Health Benefits of Jowar and Hurda

Beyond its culinary allure, Jowar carries a host of health benefits. Commonly consumed with its hull intact, it retains a majority of its nutrients. Jowar is rich in fiber, iron, protein, phosphorus, and thiamine. Moreover, it boasts antioxidants and, crucially, all sorghum varieties are gluten-free, making it an appealing alternative for those with wheat allergies.

Join the Feast: Hurda Parties for All

While the imagery of Hurda being roasted in farm fields is charming, don’t worry if you lack a personal farm. Many farm owners host Hurda Parties for a nominal fee, allowing everyone to savor this unique experience. Choose between a delightful Hurda cum lunch or a flavorsome Hurda cum dinner – or, if you’re up for it, indulge in both. The day is yours to revel in the gluten-free goodness of Hurda.
